Sweet and nutritious Granola

I don’t know about you, but I love to eat smoothie for breakfast. I think I get all my greens and nutrients from fruit in first meal of the day. I always like to put some pieces of the fruits I put in the smoothie, also on the top, so I can have a bite. But there is nothing more satisfying then a crunch of the extra spoon of home made granola. Not only out tastebuds go wild, but we also get our minerals and fibres and so much more with the nuts and dates,… Be sure, you leave those nuts out, that you know, cause digestive problems for you.

Best granola is home made granola. Because you know what it’s made of. You don’t stick sugar in it and you put different nuts every time and experiment with the best granola ever. Granola was very trendy few years ago and everyone started buying them and use them instead of cereals. It’s true. The real granola does not use processed elements and is really nutritious and make you full for a long time. It also ensures you get enough of the fibres. But do you always check the ingredients? When you make one at home, you know it won’t last for long, so you don’t put any additives in it. You will make one as you like and there will be things in it, you like and also you will leave out all those things you are sensitive to and also you will probably not adding any sugar, so this will be ideal option for healthy, nutritious breakfast.

I upgraded mine to perfection. Yes it takes a bit of time (to roast nuts), but it’s worth it. This one is my very best and I eat it also for dinner or snack or whenever I want to feel a crunch under my teeth…

So it all starts with roasting hazelnuts and that pays of, because if you lightly roast hazelnuts on your own and peel the skin of, you will get the most amazing flavour of your granola.

I measure my recipe in cups, because it’s easier. And also – who has the time to weight the ingredients 😉

Recipe for Sweet and nutritious Granola

  • 1 cup of lightly roasted hazelnuts
  • 1/2 cup of pecans
  • 3/4 cup of almonds (pealed)
  • 1 cup of coconut chips
  • 1/4 cup of pine nuts - lightly roasted
  • 1 cup of mixed seeds (sunflower, pumpkin, sesame, flax seeds,...)
  • 6-8 dates (finely sliced)
  • 2 tsp of cinnamon
  • 1 tsp of cardamom
  • 1/2 cup of coconut oil

Cut all the nuts with a huge knife and make different size pieces. Some should be bigger and rough and some a bit smaller and delicate. This will give our granola a variety and it will make it much more interested.

Finely slice the dates and put all the ingredients in a bigger bowl, where you can mix all together, so the flavours connect and give that special aroma.

Put the mixture on a baking tray and a oven, and bake for 10 minutes at 150 C. Mix after 10 minutes and bake for 10 more minutes. Now just wait until cooled and store in a glass jar.

I bet it won’t last for long 😉
