Today I’ll give you my recipe for my version of paleo potica. Traditional Slovene pastry.

Potica

Recipe for Paleo ‘potica’

  • Dough:
  • 100 g butter
  • 3 Tbsp of coconut flour (fine-grained)
  • 2 Tbsp of ground walnuts
  • 2 Tbsp of almond flour
  • 4 Tbsp of sweetener (as Sukrin - natural Stevia)
  • 1 egg
  • Filling:
  • 4 Tbsp of poppy seeds
  • 3 Tbsp of double cream
  • 4 Tbsp of cottage cheese
  • 2 dates
  • 1 Tbsp of organic honey
  • 1 egg
  • 1 vanilla bean
  • Pinch of salt

For the dough, mix everything together really well in your food processor. It should look like dough when you take it out. Wrap it in foil and put it in the fridge.

In the meantime, prepare the filling. Put all the ingredients into the blender and blend them well.

Put the dough between the foil and spread it as wide as it goes. Put the filling on the dough and roll it the rest of the way. Put the optic onto baking tray and bake it at 180 C for 40 to 45 minutes. Let it cool down before you slice it.
