Apple Coconut Pie

It is fall and all my neighbors are so sweet to let me pick apples from their backyards. Organic apples — they sometimes have worms in them and half of them are always brown or rotten, but they taste fantastic. Because there are so many, I had to find a way to get them into a recipe. My husband was always crazy about apple pies, but I had to adjust the recipe to paleo. It’s super easy — actually even easier than the regular pie. We ate so many, I added some coconut to alter the taste a bit and make something new for a change.

Apple Coconut Pie

Recipe for Apple Coconut Pie

  • 1 ½ cup of almond flour
  • 1 ½ cup of walnut flour
  • 100 grams of ghee or coconut butter (room temperature)
  • 2 tblsp of coconut sugar
  • 4 big apples peeled and sliced
  • 2 tblsp of honey
  • 1 tsp of cinnamon
  • 1 tblsp of lemon juice

First cook peeled and sliced apples in 5 tblsp of ghee. Add honey, cinnamon and lemon juice. When apples are soft, let mixture cool down a bit.

While apples are cooling, put almond flour, walnut flour, ghee and coconut sugar into food processor and mix until it becomes a paste. Put the paste into a cake model and press it evenly. Let it cool down in a fridge for at least an hour.

While both parts are cooling down, gently take the can of organic coconut milk from the refrigerator (where it was kept overnight) and take all the cream from the top and put it to a mixing bowl. Mix coconut cream with a bit of coconut sugar (depends on your taste). When all the parts are cooled down, mix apples with coconut cream and pour it over prepared base from the refrigerator. Sprinkle with cinnamon and enjoy!
