Fresh Fruit Cut

Sometimes there is time for tea or afternoon coffee with friends, but we don’t have a clue how to make something to supplement that tea and still have time to get our house in order. This cake is easy to prepare. It will bake while you have time to sort other out things as well. All that matters in our lives is that we make things simple and enjoyable right?

Recipe for Fresh Fruit Cut

  • 4 eggs
  • 1 cup of almond flour (blanched, peeled and minced)
  • 2 tblsp of coconut flour
  • 4 tblsp of ghee
  • 2 tblsp of coconut sugar
  • 1 cup of fruits (The best are sour ones to add freshness. I used blueberries and orange.)
  • 1 bean of vanilla
  • ½ tsp baking soda

Beat eggs, coconut sugar and vanilla well. Then add flour with baking soda and melted ghee. Once everything is incorporated, add fruits.

Bake at 180 degrees Celsious for 25 – 30 minutes.

Remember, the cake might turn green because of a chemical reaction between blueberries and baking soda. That is nothing to worry about. It will taste incredible despite that fact.
