Egg muffins

Sweet or salty muffins? I prefer both. :) But I looove the salty ones. They are great for dinner and if you need to take a snack with you. They are prepared really fast, and I love the fact that you can do them every time with different ingredients. My all-time favourites are done like this… Recipe for twelve muffins.

Recipe for Egg muffins

  • 12 strips of prosciutto or bacon
  • 4 eggs
  • 1 green pepper finely chopped
  • 2 spring onions
  • 1 garlic clove
  • parsley to taste
  • pinch of turmeric
  • parmesan to taste
  • salt and pepper to taste

Put the prosciutto or bacon on a muffin cups – tray, instead of baking paper. Mix all of the ingredients together and fill the muffin cups. Sprinkle the tops with parmesan and bake them on 200 degrees Celsius for about twenty minutes. That’s it. Very easy right? :)
