We always think of breakfast when we think of eggs. This thought is not really logical though, because eggs are such a versatile food. We use them in baking, frying, etc. in all meals. Eggs are a perfect food. They contain so many nutrients (if they are organic). You could survive just by eating eggs. Few years ago they were labeled as unhealthy and were blamed for high cholesterol level and therefore cardiovascular diseases. Later, when more research was performed, it was found out that eggs are not guilty of what they’ve been accused of. If you like eggs, eat them. Even if you don’t, eat them
You can prepare eggs in numerous ways, but I like them best scrambled with herbs. They are super tender and creamy if prepared like this:
Recipe for Egg bomb
- 3 eggs
- 1 tsp of dried herbs (such as rosemary, chives,...)
- 2 tbsp of sour cream
- 2 medium carrots chopped finely
- * optional - grated goat cheese
- salt and pepper to taste
Place small pieces of carrots onto parchment paper and bake them at 200 degrees Celsius for about 20 minutes until they caramelise slightly. Just before you take them out to the oven, sprinkle them with sea salt.
Beat eggs, sour cream, herbs, salt and pepper in a medium bowl, until blended. Melt the butter in large nonstick skillet over medium heat until completely melted, but not very hot. Pour the egg mixture in and mix constantly on medium to low heat. You will see the colour start to change, but the mixture needs to be fluffy and soft. Stir until you see the colour has completely changed and they seem cooked.
Place eggs on the plate with carrots and add some goat cheese if you eat dairy. You can also sprinkle with some fresh coriander if you like.
