Easy, no crust spinach quiche

It’s very tempting to just eat the first thing you see, when you come home, hungry. I know how frustrating this can be. Thinking about meal planning isn’t fun, yet meals should be simple, healthy and provide you with all the nutrients you need to get through your day.

These last few weeks have been really challenging. No school means, kids have no lunch, and with a full time job, that means another task during the day… Meal planning and cooking is challenging but doable. You can see I didn’t have time, because the photo is done with my phone and really with no effort.

The other day I came home clueless, so I decided to mix together everything I found in my fridge. Some spinach (leftover from yesterday’s smoothie), eggs (always at home), ricotta (always in my fridge) and goat cheese. Yes! No crust quiche!

That’s it. It came out amazing. I’ll definitely make it again!

Recipe for Easy, no crust spinach quiche

  • 3 Tbsp of olive oil
  • 1 Cup of ricotta cheese
  • 3 handfuls of spinach
  • 4 eggs
  • salt, pepper and spices that you like (nutmeg, thyme, parsley,...)
  • grated cheese (of any kind - can be goat cheese if you like it)
  • handful of pine nuts

Beat the eggs until fluffy and add all the ingredients to the mix. Top it with grated cheese and bake it on 200 degrees Celsius for about 20 minutes to half an hour. Sprinkle with roasted pine nuts and serve hot.

This dish is so simple and yummy. You’ll never know it’s been made in few minutes.

p.s. Sorry again for bad photo. I was sooo hungry and it was sooo good, we ate it all at once :)
