I am European gal and I loved strudel since I was a child. I always picked apples from my grandma’s backyard, so she could make this amazing desert. I still remember that warm, soft smell of strudel, baking in the oven. She knew how to make one that was really mouth-watering and delicious… And of course she thought me as well.
Since I can’t eat gluten any more, I dreamed of two dishes. Plum dumplings and apple strudel. I tried so many recipes, but non of them even remotely came close to my grandma’s strudel.
Until…. Well, until I tried this amazing recipe. All you need for the dough is golden flaxseed meal and grounded psyllium husk, some salt and hot water, olive oil and voila
I was thinking many times, why people in US gain weight a lot easier than people in Europe – Italy and France, for example. They do eat pastry and also lot’s of carbs. But they are thin and healthy. Then I went to US couple of times and observed people and their actions. Why do people there gain more weight and why do they struggle with loosing weight so much… I thought the problem was in food itself. But after taking some time to really focus on people, I got it. It’s the habits. Those small habits make all the difference. You see, I never eat in my car or on my way somewhere. I eat, when I have time and sit down. If I don’t have time to eat in peace, I rather don’t eat at all. And the real differences only start to appear here. with the first bite. How we chew, what we do while we eat,….

Anyway. This strudel came out fantastic. Even if you are not from Europe and your grandma did not make this desert for you, it will make you happy. I promise.

Recipe for Apple strudel
- 40 grams of flax seed meal
- 10 grams psyllium husk meal
- 1,2 dcl hot water
- 5 mll olive oil
- pinch of salt
- 2 apples
- 1 tsp cinnamon
- 1 tbsp butter
- 1 tbsp of lemon juice
- 2 tbsp of coconut sugar
Mix flax seed meal, psyllium husk meal and salt with oil and hot water. Knead vigorously for few minutes. Then make a ball and cover with foil. Let it there for few minutes, so psyllium husk does its job.
In the meantime peel the apples and slice them to 1cm pieces. Drizzle apples with lemon juice, so they don’t turn brown. Mix with 2tsp of coconut sugar and 1tsp of cinnamon.
Once the dough is set, roll on the dough between two sheets of baking paper. It will be very elastic and it will roll very nicely. Once the dough is as long as the baking tray, start covering with the apples and roll it to a strudel. Put it to tray and brush it with beaten egg.
Bake for 25-30 minutes on medium heat – approx. 180 degrees Celsius.
