Southwestern Stew

  

A different and delightful stew dish.

 

 

2 pounds 

 

ground beef

 

1

 

large onion, chopped

 

1 cup 

 

water, divided

 

1

 

can (28-oz) diced tomatoes, undrained

 

1 cup 

 

salsa

 

1

 

package (16-oz) frozen corn

 

3

 

medium potatoes, peeled and cubed

 

1 teaspoon 

 

salt, optional

 

1 teaspoon 

 

ground cumin

 

1/2 teaspoon 

 

garlic powder

 

1/2 teaspoon 

 

pepper

 

2 Tbs 

 

all-purpose flour

 

 

 

 

In a 4-qt. Dutch oven or large kettle, brown beef and onion; drain. Add 3/4 cup water and next eight ingredients. Bring to a boil; reduce heat. Cover and simmer for 1-1/2 hours. Combine flour and remaining water; stir into stew. Cook and stir until boiling and slightly thickened.
