Sausage Lentil Soup

This soup is great served with sourdough bread. Lentils
are a nice change from ordinary dry beans. Just brown the sausage, add the remaining ingredients and
simmer!

1/2 pound
|
|
bulk Italian sausage
|
|
|

|
large onion, chopped
|
|
|

|
medium green pepper,
chopped
|
|
|
1

|
can (14-½ oz.) diced tomatoes,
undrained
|
|
|
2

|
cans (10-1/2 oz. each) condensed
chicken broth, undiluted
|
|
|
1 cup
|
|
water
|
|
|
1
|
|
garlic clove, minced
|
|
|
1 teaspoon
|
|
salt
|
|
|
1/2 teaspoon
|
|
pepper
|
|
|
3/4 cup
|
|
dry lentils, rinsed
|
|
|
|
|
|
|
In a Dutch oven or soup kettle, brown and crumble
sausage; drain. Add next nine ingredients; bring to a boil. Add lentils. Reduce heat; cover and simmer for
60-70 minutes or until the lentils are tender.
|
|
|
|
|
Yield: 6-8 servings
|
